The Kansas City BBQ Bistro, established in 2004 by Clayton Wells, has built a reputation as a premier catering service in the Kansas City metro area. The company’s philosophy centers on quality ingredients and old-fashioned techniques, with an emphasis on fire-kissed and smoke-infused barbecue that honors traditional Kansas City-style preparation. Over the years, The Kansas City BBQ Bistro has created customized dining experiences that balance fresh ingredients with the kind of flavor depth that comes from careful attention to the cooking process.

For weddings and special occasions, the catering service accommodates events up to 100 guests, working directly with couples to design a menu that fits their budget and celebration style. Clayton’s approach emphasizes both the quality of the food and the ease of the planning process—couples can order by phone or email, discussing their event date, guest count, and menu preferences without complicated booking systems. In 2021, Clayton expanded into restaurant ownership by purchasing The Hickory Log, bringing those same BBQ principles to sit-down dining.
